I wanted to stray from the cookie tray, but these Salted Chocolate Drop Peanut Butter Cookies kept calling me back! This classic cookie was not laden with peanut butter, but rather teased the tastebuds with only a hint. Don't worry! The peanut butter does permeate, in the subtlest fashion, its cake-like container under a drop of dark chocolate and sprinkle of coarse sea salt to finish. A variation on a traditional treat, but for me, far more preferable to eat. Enjoy!!
Ingredients
Servings: 40 Cookies
Prep Time: ~25min
1/2 Cup Butter, unsalted
1/2 Cup Peanut Butter, raw
1 1/2 Cups Sugar
1/2 Cup Powdered Sugar
8oz Cream Cheese, softened
2 Eggs
2 1/2 Cups All Purpose Flour
2 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp Salt
40 Dark Chocolate Kisses
Coarse Sea Salt, optional
Preheat oven to 350 Degrees.
Cream the butter, peanut butter, sugars, and cream cheese. Mix in the flour, baking powder, baking soda, and salt until integrated. Spoon heaping spoonfuls of the dough onto a non-greased cookies sheet with about 1” space between each cookie. Press a kiss into the center of each cookie. Bake at 350 degrees for 12-14 minutes, or until cookies are a golden brown. Set aside to cool.
