This fresh Raspberry Jam is a perfectly tart addition to the growing collection of jams, jellies, and compotes. Serving up heaping flavor in a small spoonful, it works wonderfully as a glaze, atop breads, or as a filling. Enjoy!!
Ingredients

12oz Raspberries, rinsed, reserve 1/2 cup
2 Tbsp Sugar
On medium heat, warm the raspberries, sugar, and salt. Heat until the raspberries bubble and begin to gel. Lower the heat before testing a small spoonful on a cold plate. Toss in the remaining raspberries and stir until the heat breaks them up. Set aside to cool.
