Have you ever been to a picnic or potluck and stumbled upon a tray of Lemon Bars? At the end of the event, were any left? With how often I have seen them around, it seemed time to put a version of the tart treats on eatTALK. With a buttery shortbread cookie crust to soften the zesty intensity of the lemon filling, wanting more becomes more certain with each bite. Enjoy!!
Ingredients
Prep Time: ~30min
Servings: 20 bars
Crust
1 Cup Butter, Softened
2 Cups All Purpose Flour
1/2 Cup Sugar
1/2 Tsp Salt
Zest of 1 Lemon
Filling
3 Eggs
2 Egg Yolks
2 Egg Yolks
2 1/4 Cups Sugar
3/4 Cup Lemon Juice
1 Cup All Purpose Flour
Zest of 1 Lemon
Crust: In a large mixing bowl, combine the butter, flour, sugar, and salt until dense dough forms. Press the dough into a lightly greased 10" round springform pan. Sprinkle the lemon zest over the crust and lightly press into the dough. Bake the crust at 325 degrees for 20 minutes; set aside to cool.
Filling: In a large mixing bowl, beat the eggs, sugar, lemon juice until creamy. Mix in the flour. Fold in the lemon zest. Cover the pan with foil and bake at 350 degrees for 50 minutes to 1 hour, or until filling has set. Remove to cool to room temperature before refrigerating for 2 hours. Dust with powdered sugar before serving.
Raise oven temperature to 350 degrees.
