Shortbread, The Butter Biscuit

When I was a child living abroad, there was a distinct buttery flavor that became synonymous with tea time. This Shortbread treat became such a staple that even as an adult I desire its buttery taste with tea, coffee, or any other warm beverage. The ingredients are simple. The recipe is easy. The little butter biscuits smell incredible in and out of the oven. With a much-loved flavor leaning in its favor, the tasty morsels offer little reason to not give a go.

Ingredients
Servings: 24 cookies
Prep Time: ~15 min

2 Cups All-Purpose Flour
2/3 Cup Sugar
~2 1/2 Tbsp Water, ice cold
1/4 Tsp Salt, Optional
1 Cup Butter, unsalted, chilled

Preheat oven to 325 degrees.

Sift the flour and salt into a mixing bowl and stir in sugar. Slice the butter into small cubes and fold into the flour with a fork. Continue to blend until small beads form. Using a spray bottle, spritz the mixture lightly with water and continue to work mixture until a thick dough forms. Press the dough into an ungreased 9 x 9 baking pan. Bake at 325 degrees for 45-50 minutes, or until golden in color and lightly brown at the edges. Remove to cool. 

Note - cookies will continue to harden upon cooling. Also, for a cleaner cut for serving, score the dough into the desired cookie shape at 30 minutes (ex. using a knife, pre-slice the cookies into 3 x 8).
