The season of seasonal food and comfort creations is on its way, and to me it almost always involves a freshly-baked sweet loaf. Though I didn't intend on making these particular mini-loaves, they became tasty little concoctions that I need not spoil myself with on a daily basis (despite wanting to)! For a day or two, next to my rather large cup of coffee, I will enjoy the sweet subtleties of a Honey-Butter Glazed Banana Loaf. I think the season is off to a good start!
Ingredients
Servings: 3 mini-loaves / 1 large loaf

Banana Loaf
8oz Ripened Bananas, Mashed
1 1/2 Cups All-Purpose Flour
1 Tbsp Baking Powder
1 1/2 Tsp Baking Soda
1/3 Cup Sugar, Granulated
1/4 Cup Nonfat Milk
1 Egg
1 Tsp Vanilla Extract
3 Tbsp Butter, Melted
1 Banana, Medium, Chopped
1 Banana, Medium, Chopped
Honey-Butter Glaze
2 Tbsp Butter, Unsalted, Melted
2 Tbsp Honey
1/2 Tsp Cinnamon, Optional
Preheat oven to 350 degrees.
Loaf: In a small bowl, mash up the bananas with a fork until smooth; set aside. In a medium sized mixing bowl, combine dry ingredients with milk, egg, vanilla extract, and melted butter. Fold in the mashed bananas until thoroughly mixed. Fold the chopped banana into the batter. Spread the batter among three pre-greased mini-loaf pans, or one large loaf pan. Bake at 350 degrees for 20-25 minutes or until inserted knife comes out clean.
Honey-Butter Glaze: Melt the butter (microwave/stovetop). Whisk in the honey and cinnamon into the melted butter. Slice the loaves cross-wise from the top to about halfway (mini-loaves can go for six slices, larger loaf may go for more). Drizzle the melted butter across the freshly made cuts. Using a pastry brush (or paper towel), spread the remaining glaze onto the tops of the loaves. Allow to cool to room temperature and enjoy!!
